December Fun

December went by in a flash!  Here are a few things we did to keep us busy:
  1. We had a pizza & movie night with our neighbors.  Harper & Tara had their own fun by dancing, singing and cheering!

2. We stayed in Des Moines one night to do some shopping, swimming & relaxing.  Harper is becoming quite the little swimmer with the help of her water wings.  We even met up with our good friends Abby & Aaron for supper - as always it was great seeing them.

3. Harper got to visit Santa TWICE this year.  Each time was a fail ~ she never cried but she also didn't sit on his lap or say one peep to him.  Maybe next year!

We also played in the snow after our first big snow storm of the year.  Harper & Adam played outside for almost 2 hours - she LOVES the snow!  She is really good at making snow angels, throwing snowballs, and eating the snow!

And of course we've been watching LOTS of Christmas movies and singing LOTS of Christmas songs!

Now that Christmas is over ~ I hope these next few cold months hurry by so we can enjoy Spring!

Christmas Engagement

So.........after 7 1/2 years of dating my brother finally proposed to his girlfriend!!!!  And we couldn't be more happier!!!!

Michael proposed to Kaitlyn on Christmas Eve in front of her favorite Christmas Tree in our hometown.  It is a gorgeous tree - mini tree of Rockefeller Center ~

And Harper is excited too!  She loooooooooves Kaitlyn!!!!

Welcome to the family Kaitlyn - we love you!  Can't wait for you guys to give Harper some cousins! {but lets wait a few years on that ;)}

Christmas 2012

We hope is having a blessed holiday season!  We celebrated with my side of the family on Christmas Eve - we ate lots of yummy soup, played Logo (FUN board game!), attending the Christmas Eve church service, opened gifts, and enjoyed more soup and family time at my Grandma & Grandpa's house.

Christmas 2012
My beautiful family!

Our 7th Christmas together!
14 weeks on 12.24.12
This little girl had a great Christmas!  She is enjoying all of her new toys, which is also keeping us busy!  We've already talked about taking the Christmas tree down and she is NOT happy about that!  Wish us luck!  It's hard to believe that there will be a 2nd child next year at this time!  It's going to be so fun!  We can't wait!

This weekend we head back home again to celebrate with Adam's side of the family!!!  Check back then for more pictures.

And here is a blog on Harper's 1st Christmas :)

Mississippi Roast

Tis the week of pinterest recipes.  I tried a new roast recipe and it was quite tasty, definitely NOT healthy!  You'll soon understand when you see the ingredients.....

Mississippi Roast

Ingredients:
1 chuck roast
1 dry ranch mix packet
1 Au Jus dry packet
1 stick of butter (told ya it's not healthy!)
Pepperoncinis (come in a jar)

Directions: Place chuck roast in crock pot, sprinkle ranch mix and au jus mix on top of roast.  Place entire stick of butter on top of roast.  Cover remaining roast with pepperoncinis.  DO NOT ADD ANY WATER.
Cook on low for 6-8 hours.

The roast was very moist and full of flavor!  Perfect for this cold wintry weather.  Adam and his brother loved it - even wanted the recipe!

Tree Farm 2012

The weekend after Thanksgiving we ventured out to find our Christmas tree.  This was our 3rd year of cutting down a tree and it is something we all look forward to.  My parents and Brett we even able to join us this year!  Enjoy the pictures:

And of course I love comparisons: Here is our 2011 experience!

12 Week Update

How far along: 12 weeks

Size of Baby: 2 inches (about the size of a lime)

Maternity Clothes: None yet!  Although I'm going shopping this weekend to hopefully find some cute maternity jeans, leggings, and tops.  It helps that I get to lounge around in sweats all day and wears scrubs to work.

Gender: We ARE going to find out the sex this time, mostly to prepare Harper as much as we possibly can for this huge change/transition in her life.  However, the name will NOT be revealed.  Speaking of reveals, stay tuned for details on the gender reveal party that I am in the works of planning.  We will hopefully be able to find out the gender in early February!!!

Movement: We had an ultrasound on Monday and saw the baby moving around like crazy, but I still can't feel it yet.  I am looking forward to that moment...hopefully next month.

Sleep: I am completely exhausted 24/7!!!  I could sleep 20 hours out of the day if I could.  The books aren't lying when they say fatigue is much more severe with your 2nd child, due to taking care of your first born!  I think the combination of being pregnant and working nights is really taking its toll.

What I miss: Nothing yet ~

Symptoms: Other than fatigue, I haven't really had many symptoms.  Certain foods make me want to vomit - particularly chicken breasts and any type of casserole.  If I eat too much of a warm food, I feel nauseous, which is really the only symptom that I have, which is all I had with Harper too!  Yes, I feel very fortunate to have missed out on the morning sickness each time!

Cravings: Because the thought of certain foods make me nauseous, I pretty much keep to certain foods.  I've been eating a lot of yogurt, cereal, oranges, and milk.  I guess anything cold is appealing.

Best Moment of the Week: Seeing the baby for the 2nd time on ultrasound and getting to hear the heartbeat at my appointment.

Looking Forward To: feeling movement and finding out the gender

Online Shopping

I'm normally not a big online shopper.  I will order pictures from Snapfish, books/DVD's from Amazon, and maybe a few things here and there from Kohls.  But this year I did all of Harper's Christmas shopping online...and from one site, Toys to Grow On.

We received a catalog in the mail a few weeks ago and it had the coolest toys in it, stuff that you don't typically see in local stores.  We are very happy with their services ~ free shipping on all orders over $59 and it only took 1 week!

Here is what we picked out for Harper this year:

* Musical Hippity Hop (the girl loves to jump!)

* Make-A-Word Picture Puzzles (loves puzzles too!)

* Don't Let the Bugs Fall

* Clap & Laugh Microphone Set

* Marble Run

* Roll-On Painters

* Stencils

It's not too late for you to order too, guaranteed delivery by Dec 24th if you order by Dec 18th!

Who Stole the Cookies From the Cookie Jar?!

We have a Santa Clause cookie jar sitting out on our kitchen counter right now and it is was actually full of cookies for a change.

Well, Miss Harper has a sweet tooth.  Adam caught her red-handed today stealing cookies!

After trying to reach the cookie jar with her step stool and not being quite tall enough, she moved a kitchen chair over to the counter instead.

When Adam asked Harper why she moved the chair over to steal cookies, she replied "Cause that's what kids do!"

Oh Miss sneaky and clever Harper :)

Holiday Divided

Adam and I spent the Thanksgiving holiday at work this year.  (Working holidays is the one major downfall of having a 24/7 profession.)

Due to our crazy work schedules, we celebrated Thanksgiving with our immediate families apart.  I was unable to attend his family's get together, and Adam was unable to attend mine.

It was different, but something we are used to.

Good news though - we have Christmas Eve off together and Christmas day!!!

Anyways....my point of this post was to share how thankful we are for our jobs, despite having to work on Thanksgiving.  We both have jobs that we enjoy, co-workers that we consider friends, and a profession that hopefully others are thankful for as well.

Hope you all enjoyed Thanksgiving, doing whatever it is you do.

Check back soon for our 3rd annual Christmas Tree Farm photos!

Big Girl Car Seat

We have purchased Harper's 3rd and final car seat.  Yay!  I guess when you become a parent, these milestones are exciting....

Harper still fits in her old car seat, but was fitted to the largest setting, and even that was becoming a bit snug with her winter coat on.  Target was having a sale on the Graco Turbo Highback Booster that we couldn't pass up.  The car seat was only $30, a 40% discount from the original price of $49.99.

Harper just meets the height requirement of 38", but surpasses the weight of 30 lbs.  When Harper gets older the back comes off and can be used as a booster seat.

The sale lasts through this weekend - so go grab one before it gets crazy on Black Friday!

ENT Visit

Harper had a visit with the ENT today to get a second and more educated opinion on the size of her tonsils.
We received great news as she does not have to have her tonsils out at this point!
As long as Harper remains asymptomatic (no recurrent infections, periods of apnea while asleep, choking on food, and/or excess snoring) then the doctor sees no need to remove her tonsils.  He did agree that they were large, but reassured us that she will "grow into them."  Let's hope he's right!

**On a side note, Harper weighed 40 lbs today and is 38" tall - she is a beast!  Time to start cutting back on the apple juice and fruit snacks!

Halloween 2012

Harper was Scooby-Doo this year for Halloween.  Her first choice was to be Velma, but the costume was just not warm enough for the cool Iowa fall nights.  She happily settled for Scooby as soon as she tried the costume on at the store.  In fact, Harper was so thrilled with the costume that she refused to take it off and crawled around the store on all fours barking like a dog. (she even wore it in the car seat on the way home!)  This is SO unlike her character since she is so shy, but it's nice to see her starting to come out of her shell.  Harper also had a Scooby Doo candy pail to accompany her get-up, compliments of McDonalds.  I love that McDonalds still gives out Halloween pails in place of the traditions Happy Meals packaging for the holiday.  I remember getting one as a kid, so it was neat for me to do this with Harper as well.

Harper did a great job this year saying "trick-or-treat" at every house except for two.  Last year she didn't say a peep.  I really think that preschool has helped her with her social skills.  We walked around the neighborhood for about 30-40 minutes before we headed back home to hand out our own candy.  Harper had just as much fun handing out candy to everyone and even handed it out "by herself" towards the end.

My little Scooby-Doo
I was caught off guard this year when I found out on Tuesday (10/30) that trick-or-treating was to start in 3 hours.  We were planning on carving pumpkins on Tuesday and then trick-or-treating on Wednesday.  So when I picked Harper up from preschool on Tuesday, I had 2 hours to carve a pumpkin and get her ready.  Adam was not at home so I had the pleasure of carving a pumpkin on my own with a 3-year-old.  We had every intention on carving a Cinderella pumpkin, but settled for a simple design because of the limited time.

Helping mommy carve our pumpkin
Isn't it cute?!
It was Harper's turn to bring treats to preschool last week.  The "teacher" in me came out and I wanted to bring something fun for the kids.  Thanks to an idea I saw on pinterest, I drew jack-o-lantern faces on mandarin orange cups.  Harper's teacher and the kids loved them.

Lastly, I tried making a fun Halloween supper, so we had mummy dogs and dirt cups.  Harper really didn't make the connection, so we'll try again next year.  I want to create as many memories and traditions with my family as possible.  It's the little things in life that mean the greatest!

VOTE!!!!

Happy Election Day!!!!!!!!!

Today ends the political ads - hallelujah!!!!

Don't forget to vote today - YOU can make a difference.

In my opinion, if you decide to deny your right to vote, then you lose your right to complain about the government!

Still not sure who to vote for?  Visit my post below to take a few quizzes to help you decide.

11.05.2012

One more Ad

Just in case you haven't had enough of the political ads.......

I saw this on Facebook and couldn't agree more.  Obama is for gay marriage and Romney opposes it.

I personally don't understand why marriage has to be between a man and a woman.  What does it matter?  Don't even think about throwing some bible verse at me, because our politicians and government clearly do not follow the 'Good Word.'

One minute they're making it illegal to pray and use 'God' in the Pledge of Allegiance at school and then the next minute they're trying to shove the bible in our face saying that "the bible states that marriage is between a man and woman......" blah blah blah

Okay, I'm done now.  Go vote tomorrow!

PS - I'm registered as an Independent - I'm not in anyway advocating for the Democrats.  I'm truly on the fence still at this point.

Tangles

The other day Harper and I were having a conversation about her classmates.

I asked who one particular girl was and she replied,  "the one with tangly hair."

I was puzzled for a few days until I saw this girl with "tangly hair," turns out she has a beautiful head of curls :)

Fall Happenings

It's hard to believe that it will be November in 4 short days.  Worse yet, daylight savings is in ONE week...gross!  We've been staying busy this fall with school, football games, a trip to the pumpkin patch, yard work, and attempting to "declutter" the closets.

If I'm not working (or sleeping), I try to engage Harper in an educational activity or craft each day.  Harper loves "doing homework" and enjoys any extra activities that we do together.  Her newest love is a glue stick :)

Playing a number/matching pumpkin puzzle

counting!

more counting!  She did this ALL by herself!  My little smarty pants!

We've also done a few pumpkin crafts and paintings this fall.

Adam has also been staying busy this fall by joining a group called Sideliners.  Sideliners is a group of guys that get together the Wednesday before every home football game to have a meal with the football team.  Each football player is paired up with a member of Sideliners for the entire season.  The 'sideliner' is there to support the football player and serve as a role model.  For all home games the Sideliners line the football field entrance to be the first to welcome the players to the field.  It's a very neat organization and both the kids and adults enjoy the companionship.

We are looking forward to carving pumpkins and trick-or-treating later this week.  Pictures to follow :)

Harper's 1st School Picture

I am a horrible parent and forgot to order Harper's very first school picture.  However I don't think it's too late, as Life Touch Photography is located here in Clarion, so I'm pretty sure I can go up to their office and work something out.

Here is a composite of what her picture looked like :)  FREAKING HILARIOUS!!!!  We knew she wouldn't smile - which makes this picture so funny.  We definitely need to order one just to have, and to remind us of how shy was at the age of 3!

Update: I just got a note from Harper's teacher stating that picture re-takes are tomorrow!  Let's see how round 2 goes :)

no-mess tacos

We love tacos in our house, except they are so messy for little ones.

I read in a parenting magazine a few years back about using a chip clip to secure the end of a taco in order to avoid everything falling out of the bottom.

This little tip honestly works wonders.  Harper did not have a single piece of meat on her plate after eating her taco, seriously not.one!

{She is distracted by the TV - I believe she is watching Mickey Mouse, although we usually have the TV off during meals.}

Another little tip when making tacos is to add in 1/2-1 can of beans to the meat mixture.  (I have used garbanzo beans and black beans.)  I promise you won't be able to taste the difference (and either will your kids) and the beans add volume, adding extra servings to your meal, and the beans pack in some extra protein!

Cheap Christmas Cards

I know it may seem a little early to be posting great deals about Christmas cards, but they say "the early bird gets the worm."

York Photo is offering 20 4x8 photo cards for only $1 plus S&H.  I took a minute to look at the designs and they are actually really cute.  This offer expires November 15th.  {I'm secretly hoping that they decide to extend this offer for procrastinators like myself!}  Use coupon code: 1CARD at checkout.

They also have baby announcements and birthday invitations that qualify for this offer as well.

Pick A Better Snack

Harper's school district participates in a healthy living program called 'Pick a Better Snack,' which is sponsored by hospital here in town.  Pick a Better Snack encourages children to pick fruits and vegetables for snack choices.  Once a month hospital employees volunteer their time and introduce a new fruit or vegetable to the kids.  Each student is strongly encouraged to try the monthly snack.

This month Harper tried turnips....and liked them!  Who would've thought?!  In addition to taste-testing the snack, they also get a hand-out to take home containing information about nutritional value, how to store, and how to prepare!

Next month's snack: Parsnips

I think it's a great thing that schools are incorporating 'healthy living' into the curriculum.  Now if only they could do a course with all of the parents...........

Who is right for YOU?!

It's hard to go a single day without thinking about the election thanks to the never-ending commercials, phone calls, and mail flyers.  I can't name one person who enjoys the campaigning.  With the plethora of information that is thrown at a person, it is hard to know who one should vote for.  Democrats will be Democrats, Republicans will be Republicans.  However, there is no black and white in politics, there is a lot of grey area.  Meaning, you may support certain policies/ideas of a particular candidate, but also disagree with others.  It's a catch 22.

Four years ago I couldn't decide what side of the fence I was on - an elephant or donkey...so I registered as Independent.  I don't pay enough attention to politics to truly understand what's going on.  Which is why I have found a few quizzes to help you decide who to vote for this year.  Each quiz matches your views to the candidate that is most like yours.  You may be surprised to find out which candidate YOU should vote for.

My results on all 3 quizzes came up Mitt Romney.  (There are a lot of other no-namers that I matched up better with though)  I was surprised at this.  So guess who this girl is voting for????  I'm curious to see if you all get matched up with who you were intending on voting for - feel free to leave me a message!

Present Hiding: Fail!

We bought our first Christmas present of the year on September 29th - almost 3 months early.  This NEVER happens.  I usually do Christmas shopping 1-2 weeks before the big day.  However one of the stores in our town has been bought out by Shopko, which means everything is deeply discounted to make room for the new inventory.

So we bought Harper a new bike, a "big girl" bike with training wheels.  It was supposed to be one of her Christmas presents, however Adam did a terrible job 'hiding' it.  He basically just plopped it down in the garage, expecting her not to find it.  I think he may have forgotten that she is a curious 3-year-old that is always looking for trouble ;)

And so the 'present hiding' already begins.  I just didn't expect it to happen so soon!  Lesson learned.

Bambi

My poor little Harper.  I think she has watched Bambi one too many times.

If you live on planet Earth, then you know that Bambi's mom dies at the end of the movie.

I don't know if Harper is worried about me dying, but she has said a few things in the past weeks that really make me sad,

"Mommy, you're not gonna die, right??}

"I would be so sad if you died."

Aww - it breaks my heart just thinking about it.  I reassure her that I am not going anywhere.  Then she will say "Bambi's mom died."

Who knew a Disney movie would be so upsetting?!

PS - Did you know that Bambi is a boy?  I did not.

Job Update

Just a quick update to let you all know how my new job is going....

So far I'm loving it.  I love my co-workers, the new facility, and of course the patient care.

I work 3 12-hr shifts/week, which I also love.  It is so nice being home majority of the week.  I only have 2 weeks left of orientation until I'm officially "on my own."  Although I've been taking my own patients for the past few weeks.

I love not having to report to anyone, i.e. nursing instructor.  It is nice not having to ask another nurse to get a medication out for me, or have them watch me hang/give IV medications.  I really enjoy the autonomy of being a nurse.

AND - I got my first paycheck yesterday.  I know this may sound crazy, but I am so excited to start paying more bills.  Adam has payed for 90% of our bills while I was in nursing school, which I feel horrible about.  I am happy that I can start contributing more to our family, and I know Adam is excited too :)

Fall Treat

My new fall favorite - Pumpkin Spice Marshmallows!!!!!!!!!!

They smell and taste wonderful!  Good thing they're fat free ;)

Look for them the next time you go grocery shopping - I promise you won't be disappointed!

There is also a yummy recipe on the back of the package - basically it's a recipe for rice krispie bars using the pumpkin marshmallows along with adding in some candy corn

Happy Fall!

Preschool Update

Harper has been in 3-year-old preschool now for 4 weeks.

This week was the first week that she didn't cry when we dropped her off.

We hope that she has finally turned the corner and is getting used to her new routine and new faces.

For being as bashful as she is, Harper's teacher told us that she actually talked to them this week!  She told them all about her birthday and my dentist appointment.  Adam and I rejoiced when we heard this news.  Our daycare also told us that Harper has been talking more there as well.

Knowing that Harper is slowly starting to break out of her shell solidifies why enrolled her in preschool.  We didn't enroll her because she needs to learn her numbers or ABC's, we enrolled her for SOCIALIZATION.
We hope Harper continues to transform into a social butterfly :)

What does Harper think of preschool?????

Well, she's hot and cold on the subject.  When she gets home from preschool she tells us how much fun she had.  However the hours preceding preschool are full of meltdowns.  She usually cries and says "I don't want to go to school" or "Lets go later."  And then some days she's begging to go and can't get out the door fast enough.  Overall we know that she is enjoying herself, she just gets a little separation anxiety thinking about leaving us for a few hours.

Harper had school pictures on Tuesday - and didn't smile.  Those should be interesting - I'll be sure to show you :)

Today was an exciting day at school because the class was taking a field trip to the library (one of her favorite places) and it was show and tell.  I'll give you one guess as to what she brought...DUCKIE!

Well - gotta go pick up the little munchkin.  Have a great day!

Birthday Pictures

Here are a few pictures from Harper's 3rd Birthday:

Harper's birthday was on a Tuesday this year so we didn't do much on her actual birthday.  I made her some special birthday pancakes that I found on Pinterest. (This will become a birthday tradition - they were yummy!)  Then she opened up presents from Adam and I.  That afternoon Harper went to preschool and took birthday treats - mini chocolate cupcakes with pink and blue frosting!

Harper with her birthday presents: Memory, Caillou puzzle, Caillou books, Doc Mcstuffins Doll & Chipettes t-shirt (Harper picked out the doll and shirt with her birthday money from her great-grandpa)

We had Harper's birthday party the Saturday following her birthday.  The theme this year was Caillou.  Harper has been border-line obsessed with Caillou for the past 6 months or so.  Google Caillou if you have no clue what I'm talking about :)  We had a hot dog buffet/bar with all the fixins' - it was affordable, easy, and delicious.  I got the idea from Pinterest (imagine that!) when I saw a 'pin' for cooking hot dogs in a crockpot.  Our fixins' included chili, cheese sauce, bacon, onions, jalapenos, bacon, pickles, relish, ketchup, mustard, and hot sauce.  I think everyone enjoyed making their own 'gourmet' hot dog.

Thank you to everyone who made the trip down to our house to help us celebrate Harper's 3rd birthday!  It was a great afternoon.  Although we had a fun and memorable day, Adam and I were planning to announce our pregnancy at the party.  The plan was to have Harper open up a present that contained a t-shirt that said "Big Sister" on it.  So it was a bitter-sweet day.  O'well - we enjoyed celebrating the life of Harper and pray that she will be a big sister at her next birthday party!!!

3 Years Old

Happy 3rd Birthday to our little Harper!!!!!!

Although the past three years have gone by so fast, you are still so young and fragile!  It must be so interesting to be 3 - with life happening so fast and learning new and exciting things every day.  (No wonder why you don't like to nap - might miss out on something!)  You are one of the smartest and kind-hearted 3-year-old's that we know.  You are also one of the shyest...and silliest! One of our favorite things to do is watch you play with your babies - it tells a lot about your character :)  We hope one day you get the chance to become a big sister, because we are confident that you will do an AMAZING job!  We can't wait to see what this year has in store for you - hopefully lots of learning and breaking out of your shell a little bit :)

Weight: 37 #

Clothing Size: 3T/4T bottoms, 4T/5T tops - I now shop for Harper in the girls section - it feels so weird not to shop in the baby/toddler section anymore.  Harper's clothes are already getting more expensive - I dread to see how much they'll cost when she's in high school!

Shoes Size: 9

Eating: Harper still eats almost anything (I refuse to put up a picky eater) - except for corn and cantaloupe.  She loves fruit, cottage cheese, yogurt, toast, mac and cheese, cereal, chicken, deli turkey, chips, eggs, ice cream, chocolate milk and juice!

Sleep: It's hard to believe that she's been in a twin bed for almost a year.  Harper goes to bed b/w 8:30-9 and wakes up in the 7 o'clock hour, sometimes later.  She sometimes wanders into our room in the middle of the night and sleeps with us for a few hours and then goes back to her bed all on her own.  It's so sweet - I don't mind, especially when Adam is at work and I'm all alone.  She has started to go to the bathroom by herself in the middle of the night - score!  Daily naps are still a struggle.  The chance of her taking an afternoon nap is about 50/50, although she NEEDS a nap EVERY day!  She will usually fall asleep on the couch while watching one of her shows and will sleep for about 2 hours.  And don't even think about waking her up - she will be SUPER crabby!

Favorite Toy: Her twins - Carson and Avery

Favorite Activity: Playing on my Kindle, watching "her shows" (Caillou, Doc McStuffins, AFV, Scooby Doo), playing babies, or playing hide/chase

New Things:
*Goes to preschool (Tues & Thurs afternoons)
*Operates Kindle AND the computer by herself
*Goes potty by herself - includes getting her own toiler paper/wiping/flushing/washing hands
*Enjoys helping me cook/bake
*Beginning to recognize patterns (ex: red, blue, red, blue....)
*LOVES puzzles - can put together simple jigsaw puzzles together on own
*Swims by herself with water wings
*Can swing on the "big girl" swing
*Has a creative imagination - has an imaginary friend named Ashley, talks to her babies, sets her little table with food/dishes and sits down to eat with her babies, etc.

We are having Harper's birthday party this Saturday - check back for pictures!

AMAZING Stir Fry Chicken

Adam and I usually make chicken stir fry a few times each month.  Ours was always kind of bland - didn't really have a flavor other than the soy sauce that we used.  I found this recipe on pinterest (surprise, surprise!) and it is the easiest and tastiest homemade stir fry sauce that I've tasted!  It has a hint of both sweet and spicy - it's simply amazing!

Honey Sauced Chicken (click for printable recipe)
3/4 pound chicken of your choice (*we use 2 chicken breasts)
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup honey
1/4 cup soy sauce
1/8 cup chopped onion (or 1/16 cup onion flakes)
1/8 cup ketchup
1 Tbs. vegetable oil
1 clove garlic, minced
1/4 tsp. red pepper flakes
Season both sides of chicken with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3 hours or on high 1 1/2 hours. Chicken into bite size pieces, then return to pot and toss with sauce. Serve over rice or noodles.

**I dump in a bag of frozen stir fry vegetables in last 30 minutes.

To bake chicken as a 30 minute meal:
Dice chicken and season both sides with salt and pepper, place in 8x8 pan. Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.

Crunchy Black Bean Tacos

I love pinterest - mostly for the recipes.  Here is one of our new favorites!  Even though this is a meat-less meal, Adam is still CRAZY for these! We like to serve the tacos with Spanish rice.

Crunchy Black Bean Tacos (click for recipe)
Makes 8 tacos (serves 4).

Prep Time: 10 minutes
Total Time: 30 minutes
Ingredients:

2 C. black beans, cooked
½ C. red onion, minced
1 tsp. cumin
1 tsp. paprika
2 Tbsp. cilantro, chopped
4-6 ounces pepper jack cheese, grated
2 Tbsp. olive oil
1 avocado, sliced
Pinch of salt and pepper
8 corn tortillas
Hot sauce
Salsa
Sour cream

Directions:
1) In a medium bowl, add beans along with red onion, cilantro, and spices. Add a pinch of salt and lightly mash all of the ingredients together. Grate your cheese and have it ready as well.

2) In a large, non-stick skillet or cast iron skillet, add a few tablespoons of oil and heat over medium-high heat.

3) Add one corn tortilla at a time and let each get hot in the oil for a few seconds. Then add about 1?4 cup of the bean filling to one half of the tortilla. Top with a sprinkle of grated cheese.

4) Using a spatula, carefully fold the tortilla over so it forms a shell. Press down lightly on the tortilla so it holds its shape.

5) As the first tortilla cooks, move it to the side and do a second one. Depending on the size of your pan, you should be able to get 2 or 3 tacos at once. If you have a griddle you can do even more at once.

6) Cook each taco for about 3 minutes per side until they are nicely browned and crispy.

7) When flipping the taco to cook on the other side, use a spatula and flip the taco toward the fold so the filling doesn’t fall out.

8) Serve tacos with toppings like hot sauce, salsa, avocados, and sour cream.

Note: Corn tortillas are resilient to heat. Don’t worry about burning them. They are very flexible. Just be sure to cook them on each side long enough to get them really crispy.

Miscarriage: Part 2

Read Part 1here

Obviously my body was not recognizing that it was not pregnant, so we decided that it was time for medical intervention.  Before my OB/GYN did the D&C, he wanted to first rule out an abdominal pregnancy, so I was scheduled for a CT scan of my abdomen/pelvis.  Even though he did search my abdominal cavity during my first surgery, there are too many intestines to search through by surgery alone.  The CT would also show if there was a tumor somewhere causing my HCG levels to rise.

{Wednesday Aug 15} CT Scan
The results from my CT showed no evidence of an abdominal pregnancy, which is great news because I would have had to have another surgery to remove the pregnancy, in Rochester or Iowa City.  The only thing that did show up was the cyst on my right ovary (remember at first it was thought to be the location of an ectopic pregnancy?!)  My doctor said that normally cysts don't show up on a CT, or are at least not as defined as mine was.  Now we have another dilemma on our hands....is it just a cyst or is it a tumor?  Now my fate boils down to the lab results from my scheduled D&C......If the tissues from the D&C were not in favor of embryonic development then we would have to start investigating the "mass" on my ovary.  (FYI - the mass isn't large at all - just a few centimeters I believe)

{Friday Aug 17}  D&C
***The procedure went great.  It was a piece of cake, a much better recovery than the 1st surgery!  I was told that my results would come back on Monday or Tuesday.....more waiting....

{Tuesday Aug 21} HCG 3,000, lab results
*** My HCG level went down 52,000 points over the weekend - hallelujah! I have never been so happy to NOT be pregnant! We also got the lab report back from the D & C - the tissues were indeed 'products of conception' - which means no crazy tumor causing the increasing HCG levels. It is still puzzling as to why my levels were so high and why my body was not recognizing the unsustainable  pregnancy.

{Aug 28} Follow-Up D&C Appt, HCG 300
***My HCG levels today were 300 and should be down to zero within a week - yahoo!!!!!!  During my appt we discussed our entire situation and they "whys" behind everything.  My OB/GYN believes that I had twins, possibly triplets, trying to form!!!  Holy $#!*!!!  Why does he believe this???  1. My HCG levels were extremely high at the beginning of pregnancy 2. Two gestational sacs were present on the ultrasounds - but only contained blighted ovums  3. A molar pregnancy was ruled out via D&C cultures (Molars cause elevated HCG levels)

What a crazy story, huh?!

***As I mentioned in the last post, Adam and I dealing with our loss pretty well.  Some days are better than others.  I've seen a handful of pregnancy announcements on facebook and although I'm happy for everyone, I can't help but be jealous and sad that it's not us.  I'm anticipating that March may have some ups and downs, as that was when our due date was.  As my OB/GYN said, most miscarriages are a result of a chromosomal abnormality - it's amazing that our bodies can detect this.  He said that maybe one of the twins would have had Downs Syndrome and my body recognized this and told itself to stop with the fetal development.  When we look at it medically, we are much more at peace.

Adam and I both agree that our miscarriage would have been more difficult if 1) I was further along in the pregnancy 2) We actually had a baby growing 3) We had difficulty conceiving 4) we had multiple m/c.  Because we never saw a baby or heartbeat, we really didn't have anything to get attached to, other than the idea of having another baby.  Don't get me wrong - we were still sad.  However we know other couples who have been through way more devastating situations.

Now we have to wait a few months before we can start trying again for baby #2.  Thankfully we don't have any issues in the fertility department, as both pregnancies were conceived during the 1st month of trying.  I can already predict that I will be a nervous wreck the next time around - which is to be expected.  I hope to be sharing good news with you all in 2013!!!!  Please say a prayer for us.

Our Miscarriage Journey: Part 1

We never expected this to happen to us.  We never expected to join the 20% of couples trying to conceive.  We never expected to experience a miscarriage.  But we did.  Here is our story about our very long and strange journey through a miscarriage.

{Sunday July 15}  positive home pregnancy test # 1

{Tuesday July 17}  positive home pregnancy test # 2

{Monday July 30}  initial OB appointment, HCG 17,000
***HCG is a hormone that your body produces when you are pregnant.  When the levels reach 2,000 - a gestational sac can be visualized via ultrasound and when the level reaches 5,000 - the baby's heartbeat can be detected.  Because my levels were already at 17,000 at 6 weeks, I was scheduled for my first ultrasound for the following day to check size and dates.  Expected due date for baby #2 = March 25, 2013

{Tuesday July 31}  ultrasound #1, HCG 22,000, surgery #1
***Nothing showed up on my first ultrasound, not even a gestational sac.  (Remember that a gestational sac can be detected at HCG levels of 2,000 - mine was 17,000 the day before.)  They even performed a trans-vaginal ultrasound for a better view.  I wasn't too concerned because I was only 6 weeks and my uterus is retroverted, making it harder to visualize.  We were sent home and told that my Dr would be following up with me soon.  That afternoon we went to the pool for a few hours; when I got home I had SIX missed calls from the doctor's office and Adam had three - I KNEW something was wrong!  I called back and the nurse wanted me to come in ASAP because they thought I was having an ectopic pregnancy.  My OB/GYN suspected I was having an ectopic pregnancy for a few very good reasons: 1. No gestational sac showed up on my u/s, although my HCG levels suggested that an embryo/fetus had developed  2. A cyst-like mass appeared on my right ovary.  Both of these signs would lead any doctor to believe that I was experiencing an ectopic pregnancy located on my right ovary.  Because this is a life-threatening condition I was scheduled for surgery that evening.  I was told that I would undergo an laprascopic procedure to remove the pregnancy and possibly the right ovary and/or fallopian tube.  Adam and I were both very sad to hear this news - mostly because we were losing Harper's future brother or sister.  Plus the thought of only having one ovary/fallopian tube made me very nervous about my future fertility.  However surgery did NOT go as planned.  The surgery team (2 OB/GYN's, 2 med students, & I NP) could NOT find any sign of an ectopic pregnancy...anywhere!  They looked on both fallopian tubes/ovaries, outer side of uterus, and even in my abdomen....NOTHING!

Where could this mysterious pregnancy be developing?!  Was it a pregnancy or a tumor causing my HCG levels to rise?  Yes, I said tumor.  The "C" word was thrown at me as a possible - but highly unlikely answer to my unique situation.  Really?!?!  It was a hard enough week on me - not seeing our baby on an ultrasound and then going through surgery - only to be told the problem wasn't solved!!!  At this point I was frustrated that I had just went through an unnecessary surgery (although it actually was necessary at the time), yet hopefully that maybe I was indeed pregnant.  Adam and I were given hope that a pregnancy was hiding really, really well in my uterus.  We truly believed that we were given a 2nd chance.  I was scheduled for lab work 2 days post-surgery to determine the course of my diagnosis/treatment

{Thursday Aug 2} HCG 29,000, ultrasound #2
***HCG levels generally double every 48 hours in a healthy pregnancy. Today my levels should have been AT LEAST 44,000 but were only 29,000. Because my levels did increase some, indicating that the pregnancy was still developing, I was scheduled for another ultrasound. Remember, a heartbeat is visible when HCG levels are 5,000, mine are now at 29,000. Again, nothing was visible via a trans-vaginal ultrasound. My uterus did show some growth in the lining, but still no gestational sac. Bummer. My doctor called that afternoon after receiving the u/s report and said that I would more than likely miscarry over the weekend. Double bummer.

{Tuesday Aug 7} HCG 49,000, ultrasound # 3, Dr visit #2
***The weekend passed and I did not miscarry.  So more lab work was ordered.  My HCG increased again but was still not at the level it should be.  Again, I went in for another u/s thinking something has to be growing!  NOPE!  1, possibly 2 gestational sacs looked visible, however they contained only fluid.  After the u/s I was pretty much convinced that there was no chance of a pregnancy.  I was now 7 weeks along and nothing had shown up on 3 ultrasounds.  I had an appt with my OB/GYN directly after the u/s to discuss my options.  He reinforced that fact that the pregnancy is not viable.  I decided that I wanted to let my body miscarry naturally, instead of going in for another surgery.  Also, this is the first day that I heard the word multiples......as in I had more than one embryo trying to form!  At this point my OB/GYN just threw the idea out there, as my HCG levels were pretty high (even for a healthy pregnancy) and it looked like 2 sacs were trying to form.  Me...conceiving multiples...there is NO way!

{Tuesday Aug 14} HCG 55,000, ultrasound # 4
***Another week had passed and I still had not had not miscarried.  I went in for more lab work and it showed that my HCG levels increased AGAIN!  This was absolutely crazy and my doctor had never had a case like this before!  At this point I was gaining a 2nd round of hope.  I was also getting very frustrated with the mystery behind everything.  I wanted an answer.  I went back in for another u/s to see if anything had developed - same old story - nothing :(  The gestational sacs were still there - and still empty :(  I was now 8 weeks along.  We had our first u/s with Harper when she was 8 weeks, so I KNEW that a baby should be detected at this point, even in my tilted uterus.  The u/s actually brought us a sense of relief, in the fact that we finally had our answer and could move on.  This was a bitter-sweet day.

Check back soon for Part 2 - more tests and procedures!  I have divided this story into a few posts, simply because our story is long, mysterious, and complicated!

***We decided to share our story with our family/friends only because we know a lot of people who have also gone through a miscarriage.  It is our hope that our story helps those feel less 'alone.'  I personally feel less isolated because others have shared their experiences and I understand that 1 out of 5 women also go through this.

***We did NOT share our story to gain any ones sympathy.  Trust me when I say that we have coped very well with our situation and are looking forward to the future, instead of dwelling on the past.

1st Day of School

1st Day of 3-year-old Preschool
Harper's first day of school was on Tuesday!!!  How is that even possible?!  She will attend school every Tuesday and Thursday afternoon.

Adam and I were a bit nervous to leave Harper on the first day in fear that she would cry.  But much to our surprise she didn't shed a tear!  Just mommy!  A few of her classmates started SCREAMING when their parents left, which I think made Harper a bit nervous because she started looking pretty sad and asked us for a hug and kiss in a very sad voice.  It broke my heart.   I told her that I had a present waiting for her when she got home if she was a big girl and didn't cry - that seemed to do that trick!  When she got home I had a gift bag for her that contained Scooby Doo fruit snacks, temporary tattoos, and cheerleading pop-pom's.  In case you didn't know - Harper LOVES tattoos - she currently is donning 8 (you can see a few in the picture above).

We bombarded Harper will dozens of questions about her 1st day, but she didn't have much to say other than that she had fun....and she went POOP!  I guess she doesn't have a fear of going to the bathroom in public places!  She is very excited to go back.  She was supposed to have school today but didn't because the school let out early due to the heat.  We still enjoyed the afternoon by spending it at the pool!

We look forward to watching Harper develop intellectually and socially throughout the year.  We will keep you updated on any of her school happenings.  Go Cowboys!

3 Year Check-Up

Harper had her 3 year check-up/preschool physical on Friday.  She is a healthy little big girl.

Weight: 37 # (90th percentile)

Height: 38.5 " (b/w 75th - 90th percentile)

The doctor discussed the issue of when to send Harper to Kindergarten, as she is right at the cut off.  He thinks she'll be ready in 2 years, instead of 3.  This means that she will be FOUR during the first few weeks of school.  And my main concern, she won't turn 16 until the beginning of her junior year.  The doctor said because she is a girl, and is already a smarty-pants, she will more than likely be bored with a 3rd year of preschool, and will be ready for kindergarten.  I guess time will tell.

The other issue under discussion at her visit was the size of Harper's adenoids.  Over the past few months I've noticed that her adenoids appear rather large.  Dr. Nagel agreed.  Because Harper doesn't have recurrent sore throats, he doesn't think this is an urgent issue.  However he did refer us to a Ear, Nose, & Throat doctor for a 2nd opinion, only because Harper does snore, which could lead to sleep apnea.  She will more than likely need her adenoids removed at some point, the sooner the better in my opinion.

Other than that, Harper is a thriving and healthy girl!  We feel very blessed and fortunate for her good health, it is not something we take forgranted!

My first {real} job

The time has finally come......I have accepted my first REAL job.  By real job, I mean a FULL TIME job with benefits!  It only took 10 years of being out of high school and 6 years of college ;)

I have accepted a job at Iowa Specialty Hospital - Belmond, working nights as a registered nurse.  My hours will be 7p-7a, 3 nights/week.  This includes working every 3rd weekend and every other holiday.  It will be nice to be home 4 out of 7 nights/week.

Adam and I discussed the pros and cons of this job for a few weeks.  We understand that it is not the perfect fit for our family, but we are willing to try to make it work.  In fact, those are the exact words I told my boss.

The plan is to work full-time for the next year.  Hopefully at the end of next summer we will be welcoming baby #2 into our family.  At that time, the plan is to work PRN after my maternity leave ends.  I would love to work PRN or part-time until both kiddos are in school, and then I could go back full-time.

Adam and I understand that the next year is going to be absolutely crazy, but we know that it is only temporary and is benefiting our family in the long run.  Besides, we have survived much more difficult circumstances during Adam's Army career!  Thank you to everyone for all of the support and encouragement to help us get to this point.  We are going to need your help and support even more in the next year.  Thank you in advance! ;)

Only 10 more days until I enter the working world.....I am so nervous and excited at the same time!  (And maybe a little sad!)  Adam, on the other hand, can't get me out the door fast enough!

Mommy's Tummy

The other night we were watching some TV show that featured a pregnant woman.  I told Harper that a baby was in the woman's tummy.

Harper said "I used to live in your tummy."

I asked her if she remembered what it was like in my tummy, which she replied, "It was dark.....and windy."

Okay????????????????????????
